Menu Plan for the week of Nov. 8th
Monday- White Chicken Chili ***recipe below***
Tuesday- Taco Bar
Wednesday- Beef Stew and Homemade Bread *I made this a few weeks ago and it is amazing! The only bread I've really gotten to turn out perfect here in CO. AND it's SUPER easy!!! Yay!!!*
Thursday- Leftovers (Renato is out of town the rest of the week...)
Friday- Mac N' Cheese, Hot Dogs
Saturday- Pasta
Sunday- Brinner :)
White Chicken Chili---From my friend Sharon.....YUMMY!!!!
Ingredients
2 med onions, chopped
4 cloves garlic, minced
2 4oz cans chopped green chiles (sometimes i do 2 larger cans for more of a green chili taste)
4 Whole Chicken Breasts
2 t ground cumin
1.5 t dried oregano, crumbled
.25 t cayenne or crushed red pepper (depending on taste)
3 16 oz cans, great northern beans not drained
1 Can of white corn
6 cups chicken broth
salt
pepper
Directions
Combine all ingredients into crock pot and cook on low for 8 hours, give or take.
Shred chicken in crock pot with 2 forks.
Serve with tortilla chips, and cheese.
